All fats are not Curafen created equal. There are four basic natural types - cholesterol, monounsaturated, polyunsaturated and saturated. The saturated fat is the one we need to look out for. Cholesterol Stick with me a while here. It can be boring, but understanding this topic is key to formulating your nutritional plan. First, LDL is not cholesterol. Cholesterol is a soft waxy substance that is part of every cell membrane. It cannot dissolve in the blood, which is mostly water. It is carried around by either of two lipoproteins [think of them as rafts] called LDL [low density lipoprotein] and HDL [high density lipoprotein].

What happens is that too much LDL carries the cholesterol to the artery walls where it accumulates and causes "hardening." This, as you may know, leads to strokes and heart attacks. HDL carries cholesterol through the artery walls and eventually out of the body. Some experts believe that it also breaks down arterial plaque. This would help dissolve blood clots.
